First soak basmati rice in water for 1 hour
Then wash basmati rice and bring lots of water to boil, add salt, rice and cook till the rice is done 3/4 th . Drain the excess water and set aside
Soak saffron in some milk and keep aside. Then take some oil in a pan and fry that mushroom pieces for 4-5 mins and keep aside.
Now take ghee and oil in a pan. Add onions and fry them till golden and crispy. Then remove 1/4 th of the fried onions in a bowl.
Now in the remaining onions add all the whole spices and mix well. Then add ginger garlic paste, turmeric powder, chilli powder and fry for 2-3 mins.
Then add mushrooms and saute for 2 -3 mins. Then add garam masala powder, salt, 3/4 th mint leaves, 3/4 th coriander leaves and mix well. Then add curd and mix well.
Now take a pan with tight lid. put the masala in the base and add cooked rice on top of the masala.Then add rest of the fried onions, mint leaves, coriander leaves and soaked saffron on top, then cover with a lid.
Now put this pan over a tawa and dum it on low heat for 20 to 25 mins
Now switch off the flame and after 5 mins the cover and mix it well.
Now the Mushroom dum Biryani is ready to eat.
