For Dosa-
Soak rice and urad dal separately for 5-6 hours or overnight.
Then wash it and grind by adding water till smooth.Then remove it in a big container and set aside.
Then cover the container and keep it 4-5 hrs to ferment
For Uttapam-
In a kadai add oil and crackle some mustard seeds,cumin seeds red chilli and fry for 1 min.
Add onions, green chilli and fry for 2 min. Then add all the veges, salt, mix well and fry till the veges are done on medium flame.
Now add in coriander leaves mix well and switch off the flame.
Now heat a tawa and pour a ladle full of dosa batter over the tawa and spread it lightly.
Sprinkle some cooked vege over it and drizzle oil on the dosa and cook on the slow flame till it is done.
Serve with any type of chutney.
